Download (PC Engine), era defining game imo. Cyberpunk themes, rockin sound track, dodgy engrish, anime cut scenes, great cover art.

Cho Aniki PCE - Strange, but quite a good shump
R-Type III SNES - Some decent action on the SNES
Thunder Force IV MD - Makes good use of that Blast Processing
Awesome music as well.
Gradius NES - One of the first shumps I played, I still get nightmares about the first level volcano.
Mercenary Force GB - This may be pushing it genre wise, but still an awesome shooter with many options and power ups to mess around with.

Batsugun - Arcade/Saturn
Donpachi - Arcade/Saturn/PS1
R-Type Delta - Ps1
Layer Section - Arcade/Saturn
Soukyugurentai - Arcade/Saturn
Was hard choosing between Raiden and Batsugun - but Toaplan edge it with their bonkers power ups.

This is really tough but in no particular order:
R-Type (Arcade)
Gradius III (SFC)
DoDonPachi Dai Ou Jou
Mushihimesama
Border Down
A special mention is deserved for Raizing games, i'm sure Battle Garegga or Armed Police Batrider would be in there is i had more playtime with them.
