Fallout was pushing the limits of plausibility as it was. I don't think space is the next logical step. There are still plenty of stories left on Earth to tell.
There's a great episode of the original show where they convince a guy that he's in a nuclear bunker and the world has been destroyed by bombs. Maybe if they did something like that, where it was just an elaborate ruse to convince somebody they were in space, but they were just on one of those vomit comet planes.
Or summat.

Giving some insight perhaps into how the overall arc in this franchise is being built up retrospectively, Mission Impossible VII and Mission Impossible VIII have just cast Henry Czerny, returning from his role in the original film.
