Can't speak for the Simple series, but most of the Sega Ages games are complete ****ing ****.

Outrun, Alien Syndrome and Decathlete Collection are passable, mind.

Virtua Racing was OK from what I played of it - even if only for nostalgia.

Likewise VF2 although I understand the commotion it caused amongst purists !

Earth (or Terra) Defense Force 1 and/or 2.

        Old skool.

well, Space Harrier is very fun. not the best-game-evah, but a quite honest remake, for the money they ask for it.

anyone tried out Golden Axe or Fantasy Zone?

If you like hack and slash, then Simple 2000 Series Vol.80 THE Oneechan Puru -Neechan Tokubetsu Hen (as Yes-Asia call it) is a better option as it is an updated version of Vol. 61. There is also a sequel due out next month (Vol. 90 I think).

Terra Defence Force 2 is also worth a look. It is fairly simplistic (kill every alien in sight) but is fun and seems to be reaonably large.

Golden Axe is HIDEOUS. Try it at your own peril...

Fantasy Zone is quite good, but like Columns it both plays and looks identical to the original and so isn't really worth considering on PS2.

Sega released nine of the Sega Ages remakes in a compilation pack in the USA for $20. Mind you the only thing I found passable on the entire pack was Outrun.
