Definately the Remake
The graphics just seemed a whole lot better ( particulaly the FMV's)
Zero wasn't as good as it should have been - there was no real scary bits ( unlike the whole Shark thing in the Remake)
The only thing that came close is the fooked up Tyrant
I think Shinji Mikami's idea for Zero was a lot better than who ever directed the released version
In an interview he stated he would have had the game revolve around how each of the Bravo members met a grisly end

The dual control works and is implemented very well with a genuine sence of tension when the characters are seperated.
The graphics are slightly better in Zero especially the character models and the fmv has no annoying pauses.
Neither is much better than the other but Zero certainly takes the series further than remake, both are superb examples of the survival horror and are both worthy of a place in any collection

The entire Resident Evil series is held highly by myself but the Gamecube updates in particular. The enhanced hardware has obviously allowed wonders for the series. The Re-Make however is my fav from the lot. I think me reading the novel based on the game helped to an large extent to create something special. I felt like I knew the characters and even more importantly, the scientists that had been effected.
Overall though, Re-make has a greater sense of completion over Zero imo. It has a greater number of little touches that help make the game all the more special. Little things like the zombies being sick and being able to smash through a door were absent from zero, and I missed them. Also not having the defense weapons in zero is something I have always questioned, I didn?t quite understand why the step back. Seeing a Hunter chew actually on the grenade is a gaming moment that I shall probably always remember.
The tension in Re-make was also greater. I know Zero wasn?t really out to make you tense like u were in the mansion, but I missed it nonetheless. The bosses were vastly better in Re-make too (apart from the last) The laughable insects in Zero were poor imo. The shark and snake in Re-make were incredible. How they moved, how they were introduced to the player, how they attacked. Everything about them was spot on.
However, Zero had a much higher standard of voice acting, cut scenes, background effects (some of which were incredible) and being able to drop items wasn?t necessary imo but welcome. The character swap was a nice addition too and was clever how the game suddenly became tense when u were split.
Both great games imo. But Re-make is the definite Resident Evil in my book

I enjoyed Zero more than REmake.
Firstly, there was the freshness factor. Whilst REmake introduced some new touches, I couldn't get away from the fact that a good percentage of the game felt overly familiar.
Also, I prefered the fact that Zero was a harder game, probably the hardest ever in the franchise. Ammo was genuinely limited and those super zombies that took a ton of ammo to take down were genuinely worrying as they could ruin your progress. Personally I've always found that the worst RE games are the ones that give you too much ammo and make the game more of a blastathon instead of 'survival' horror. (i.e. Resident Evil 2).

Zero was in my opinion the better structured game.
I experienced none of the aimless wandering of the other episodes of the series. The ability to pick stuff up and leave them where you want made a huge difference when combined with the use of the two characters.
I was rarely far from any object I needed.
The remake was good but they should have remade RE2. This was the game I bought a Playstation for and Remake was the reasonI bought a cube.

I think Zero is the better game, certainly the pre-rendered visuals are a lot more interesting, and the character swapping works really well (Head Over Heels!).
... but, there is something about remaking the original game that makes it seems less hackneyed than the prequel.
They're both cheap these days, you may as well get them both.
