Rare's N64 Blast Corps was one of my favourite N64 games and certainly my favourite Rare game. It was nothing particularly flashy but it was so much fun to play.
I know games aren't really what Rare do these days but for me that 1997 to 2000 era was when they were at their most creative.
Kula World on the PS1 is a game I still play now due to it being available on the PS3, which is lucky as the original goes for around ?50 due to it having such a limited production run.
The game did get a fan made HD remake but as happens with these things sometimes it just seemed to lose what ever sole the original had.

I was thinking about this earlier and I was the only one of my friends who liked it.
Die Hard Trilogy (PS1)
To be fair though, it was a pretty rough game all over but it worked because it some how managed to be even dafter than the bloody films. I seem to remember it was quite a difficult game to complete.
EDIT:
I really wouldn't be surprised if I was the only person on the planet who will admit to enjoying this but...Beetle Adventure Racing (N64). There, I've said it!!
Another driving game I enjoyed was Porsche Challenge (PS1).
