In general, I find that racing games provide great examples of the fun that is 5.1. The two MotoGP games seem to get it right, particularly in giving audio clues to the position of your nearest competitor(s). It still makes me smile as I hear a bike cross sides behind me 8)
And adding to the consensus, McRae 04 is great stuff. From straining engine parts and punctured tyres/tires, through to the bump of a ripped-off tyre/tire and the subsequent, grating and sparking
wheel rims - and the 'environmental effects' of the various surfaces (Yay, gravel!) and car-obstruction interfacing (<cough> crash <cough>
)... Oh yeah, it's good. 8)
