I know the American versions of the following have widescreen modes, so the PAL ones should do too:

F-Zero GX
Burnout 2
Super Monkey Ball 2

add Eternal Darkness to the list !!

Im not 100% on this but I think Zelda WW had a widescreen mode.

Seeing as their prequels had widescreen modes I'd expect both Rayman 3 and R: Racing Evolution to also support it.

Should've remembered that Eternal Darkness had widescreen, as I had that. Unfortunately, I couldn't get on with the awkward control system.
