do all the different 6800gt's and 6800u's made by all the different companies have ddr3 memory even if in the advertisement it doesnt explicitly mention it?

The 6800 GT has 16 pipelines 350 mhz core and 1100 mhz ram. The 6800 non ultra has 12 pipelines 300 mhz core and 700 mhz DDR1. So guess DDR3 is on
Ultra.
Always check the manufacturers specifications before buying, normally they have a website where you can download pdf's with all interesting techi stuff
inside.
