Your temps are fine for a 6800 series card, dont sweat it, mine runs hotter than that no problem (It's in an SFF)
I agree, all 6800gts get louder when running 3d because they have two profiles within the bios for the fan controller, one for 2d desktop work and the other for 3d, on some models such as the gainwards you can manually set the fan speed. Mine regularly hits 77 degrees c when gaming.
