HDMI is a digital connection that future HD formats are more than likely going to require to get an HD picture. Since it's pure digital the picture should be perfect, and noticeably better than analogue connections like component or VGA. I have my DVD player connected via HDMI and it looks great, even if DVD isn't the best format to show off an HDTV.

If you plan to get a PS3 at some point then it's worth considering a tv with hdmi though as the PS3 supports it. Gives you a degree of future proofing too if there is such a thing these days!.

VGA and component are very comparable, and I think it's actually the same signal sent over different connections. For the 360 I've heard people say that component gives better colours but VGA gives a smoother picture, so take your pick. I use component and have never seen any need to change.
And you do want HDMI if you want your TV to be future-proof. The PS3 will support it (obviously it will support component as well), and it's unclear at the moment whether or not second-gen HD-DVD/Blu-Ray players and Sky HD boxes will support analogue connections for an HD signal. First-gen ones will for the sake of early adopters whose TVs don't have digital connections.

Done properly Component should look 99% as good as VGA. But there is more room for it to go wrong as it needs converted back to RGB to be shown on the TV.
Whereas VGA is RGB to start with and TVs typically don't do extra processing to mess the picture up.
Also Component inputs will only accept Video Resolutions (720p would be the best to use in that case) whereas the VGA inputs on a lot of TVs accept the panel's native resolution, so as Neko said the VGA cable will give a slightly crisper picture.
