360 HDMI Audio Question

Does the 360 Carry 5.1 Audio through the HDMI socket, so that I can plug it into an amp, or do I still need to use the optical adapter?

Yup, audio and video go via the HDMI cable, so it's the only connection you need. (Assuming your receiver takes audio in through HDMI, of course).
