Looking to pick up one of these puppies after missing one too many TV shows. Any recommendations for a particular one? I'm currently eyeing up a Sony one with built in DVD recorder or a Humax one. Both have HDMI which I would definitely need.

My in-laws picked up a Humax HDD based PVR last weekend and it seems pretty good. Looks pretty easy to use and has plenty of useful features like series recording. I think the 9300T is the model with HDMI output.
Funnily enough they already have a PVR downstairs with both a HDD and DVD recorder built in. The DVD portion is never used. I suppose it would be handy for archiving stuff.
If you are a cable customer the Virgin Media V+ box is a good as PVR's get IMHO. Simple to use, series link works well, record 2 channels and watch a third with timeshift features, good scaled output via HDMI and loads of on demand content.
