Burning a Music CD in iTunes...

Am I right in thinking that as long as I burn it to a CD-R and not a CD-RW my car's CD Player will be able to play it?

Correct, although you might also have luck with a CD-RW – it all depends on the tolerance of your car CD player's laser.
