Firstly, it depends on your TV, but often the speakers in modern TVs aren't great (it's a side effect of them being so thin).
Many people buy a soundbar to fix this, so you get good stereo quality and often reasonable "virtual" surround.
As for full 5.1, I've had setups in the past but these days I don't have one. I feel if you go for it, you're clearly pursuing very high quality and it's not worth it unless you go all in and spend the money on the right amp, cables and speakers. 5.1 setups also take up room, as in you need to mount the speakers, feed the cables around...
It depends heavily on your TV, though. I would recommend getting the TV and thinking about that later, as you can find out how it sounds in your home setting.
Main thing I would recommend isto be careful with online advice from TV/hi-fi forums. In my experience they tend to be peopled by those sorts of people who buy gold-tipped HDMI cables and insist that you have to spend ?20k on your setup, and anything else, even marginally, is totally unwatchable and utter crap.
