Can anyone tell me if the Saturn ones are as good as the DC ones for VO:OT?

They're meant to be, the sticks themselves are essentially the same.

The DC twin sticks do have an extra start button though.

You mean the saturn sticks don't have a start button, and the dc ones do? At least thats how it is on mine.

yep, start button on the DC sticks but not on the Saturn ones.

Whereas the Dreamcast sticks have an extra button between the two sticks, as well as a small pause button top right:
