Cheese (Harvest Moon Help needed)

Can anyone tell me how to make cheese?
Takaspatula bloke keeps telling me I would make more money by selling cheese rather than just milk on its own but I don't know how.

Also, how do I get new recipes?
I have found them when nosing around other people's homes but when I go to cook in my own house I can still only select either salad or soup.

You can only make cheese after you have bought the dairy processing building which costs 30,000.

I think you have to create around 30 meals before you are given the option to create desserts and other menus. The best way to do this is grow a load of turnips because a turnip on it's own can be used to make pickled onions. Do this 30 times and you'll have further food options.
