The thread title needs to have an asterisk reference “other than the entire SF2 OST” as those tunes are some of the greatest to grace a video game, never mind just amongst fighters.
I love Gato’s theme from MotW. Sounds more like the kind of tune you’d hear in an epic JRPG battle than a fighting game:
Also I totally dig the percussion in the Mega Drive version of Mortal Kombat. I believe it was a Matt Furniss effort which would explain why it sounds arguably better than the arcade original:

I agree about the SF 2 soundtrack being near perfect. I think the PS Soul Edge has the Khan Super Session tracks which are quite good.Comment

As aforementioned, clearly the correct and obvious answer to this thread is anything from the SFII series, but I'll resist posting from those games.
Thankfully, there are other SF games.
