Dragon Quest VIII gets my vote here for sure. At a time when Japanese RPG developers were trying to do anything and everything to reinvent the genre and give it broader appeal, it feels like the theory behind this was to instead keep things traditional as all hell but just to make everything in it really bloody good. On a personal note as well, this was the game that broke World of Warcraft's spell on me and made me realise that I'd rather play lots of games than just one single game forevermore.

Shout-out for Dead or Alive: Ultimate.

Doesn't really get the credit it deserves, but DOAU was the first (I'm pretty sure) online fighting game that was actually any good.

Capcom etc. had done online modes in their fighting games before (some of them actually got removed when they did the western versions), but the netcode was pretty shonky and they were just 1v1; they didn't have lobbies.

DOAU was the first online fighter where players would join an 8-player lobby, and spectate as 2 people played winner-stays on. And the netcode was probably not great by modern standards, given the strides that have been made, but it was a massive improvement over other titles at the time.
