Can someone tell me how the con artists make their money on Find the Pea?

About 20 years ago, as I naive kid I got ripped off the equivalent of ?20 on my holiday in Spain and to this day, this has always pissed me off!

Looking back, I know one thing... I think it should have been me who lifted the cup up first, right?

How do they do it? Can someone spill the beans for me please!!

I believe that the con isn't the trick itself, but moreso the fact you've hadn't over ?20.
once that is done you were never gonna get it back anyway, correctly guessed pea or not.
