Is Dragon Age: Origins the entire DA1 "experience"? Or am I right in thinking there is another part to the game that often gets bundled up in physical copies?

Dragon Age: Origins is just the 'vanilla' game, lacking all the DLC released for it. If you want a physical copy, I'd recommend you track down the Ultimate Edition of the game. It includes an expansion (Awakening) and nine other pieces of DLC. I've heard that, at least on the Xbox 360, those extras come in a second disc that you can simply borrow, install to your HDD, and use them with the regular (physical or digital) edition of the game without ever needing that disc again.

I'm not sure if this offer is still valid but BioWare was giving away lots of DLC promotional items for both this game and its sequel.
