Quake 1 is a very streamlined game, with an unusual sci-fi-industria-gothic art style and some Lovcraftian undertones, practically zero story... It's a very important game for many reasons and all its fundamentals are fantastic.
Quake 2 had a more focused single-player component with an actual story (even if it was still quite thin when stacked up against, for example, Half-Life or SiN). It had more elaborate weapons and a more consistent setting, and enemies that were a bit smarter (though still nowhere near later games like Halo).
Quake 3 was almost entirely multiplayer-focused; its single-player was just a load of games against bots framed like a progression (though it was still fun to play solo). Q3 is hyper-streamlined; it doesn't have (for example) double-tap dodges or weapons with multiple firing modes like the contemporary Unreal Tournament. Q3, if I had to sum it up, is Q1's multiplayer polished to an absolute mirror finish. Kinda like... Like how Go has fewer "features" than Monopoly, but despite that the game takes a lifetime to master. Q3 is a master's game and seeing someone play it at pro level is honestly kinda mesmerising.
All three of them are great to play if you're a fan of FPS games and, along with Doom, want to see the genesis of games like Halo and Half-Life 2. They're all quite different and each offer something unique.

I can't help but judge them more based on how their multiplayer panned out.
Quake is *really* fast-paced, and as well as environmental knowledge of levels being crucial, reactions are a huge deal. Quake 2 was a lot less twitch-y; things (see: rockets) weren't as quick, and instead there were more precision elements like the railgun. Quake 3 sat somewhere in the middle - it moves like the clappers, but still has a very high dependency on aim. I love them all, and although I spent the most time with 2, I do think 3 might be most fun and the one with the highest skill ceiling.

The current version of Quake 1 for me. My remembrance of Quake 2, which I also adore, was tempered by playing it on the PS1. A fabulous conversion which I still have but that was pre-analogue stick days, so the X-Y turn and aim controls were mapped to buttons just like Duke Nukem Forever. Added an extra spicy level of difficulty. Quake 3 had some gorgeous MP maps.

I completed the main game yesterday. The last level was a bit of fun. I got my ass kicked a few times then...
I tried just running past everything once I killed that first shambler. Ran all the way to a portal and ran in and then got CONGRATULATIONS. That was handy.
The game really holds up. The levels are generally superb and I enjoyed just dipping in and out and chipping away at levels. It feels great on the Switch too (I mean, if you haven't got drift).
Started the first set of expansion levels now. There is a serious amount of content in this package.

You have to enter the portal just as the crystal thing passes into the body of the boss, otherwise you get teleported to wherever it is.
Until I worked this out I was dumped time and again into lava.
