Most of my picks have been mentioned already but here are a few more:
God Hand - SERIOUSLY good fighting stuff. It's a bit rough around the edges but it's clear that more effort went into the fighting system.
Devil May Cry 1 / 3 - Can't be recommended highly enough if you're into action games.
We Love Katamari - Wonderful!
Psyvariar 2 - Bullet buzzing FTW! You can find this for a couple of quid in the pre-owned section of Game or GameStation
Soul Reaver 2 - Bit of an oldie but goodie so it's cheap and easy to find, this still looks pretty good visually today and the puzzles are very well designed. Top adventuring.
Also, if you don't have a GameCube / Wii, definately go after Viewtiful Joe and Killer7. But both work better on a Cube pad IMHO.

Final Fantasy XII - I just started it last week, it helps if you've played Vagrant Story / Final Fantasy Tactics, Ivalice reminds me of Warhammer Fantasy Roleplay for some reason.
Densha de Go! Final - If you like trains... I'm completely hooked.
Xenosaga Trilogy - I'm only 10 hours into Episode 1... digging the story, the game itself is more than a little repeditive... again, I think it helps if you've played Xenogears.

I say it all the time - it must get tiring. But Xenosaga just doesn't live up to Xenogears - Ep.1 is decent, 2 is bollocks, and 3 I havn't dared play.
