This is a great thread!
No particular order:
Vegas 1 (felt like a proper co-op S.W.A.T. team)
Lost Planet (Mechs, grappling hooks, great multiplayer)
Bioshock (Involving story, ingenious setting, tense atmosphere)
Call of Duty 2 (great multiplayer, cinematic story, many funny multiplayer moments)
Dead Rising (nothing else like it, Dawn of the Dead: the game, zombie massacre)
Hang on, I'll tally up...

So it looks like it's worth buying a Wii just to play Mario!
I'm pretty pleased that other people like Dead Rising and Lost Planet too as they were a little unusual in their delivery. I'm also happy to see so few direct sequels in the list too.
If anybody else adds to this thread, I'm not updating this post!

Bioshock - Not much to say except: ‘Welcome to the Circus of Value! ‘
Condemned - They dropped the ball in the second half but those first few stages (especially the shopping centre level with the manikins) were pure genius.
Mario Galaxy - a perfect game?
MGS 4 - even if it was ****e I’d still have it on my list just for the flash back sequence with the : ‘I’m having that dream again‘ line.
Zelda Twilight Princess - so much hate for such an awesome game.

Lost Planet acheives what it set out to do, and extremely well. I didn't vote for the game because, while I've completed it, I've no real interest in playing it again (bearing in mind I don't care about the multiplayer element). It was a quality game though, if annoyingly hard, but perhaps not to my preference. I certainly prefer Dead Rising, to the level where I'm looking forward to replaying it on the Wii.
Lost Planet being 'boring' is just down to preference. I felt the same way when I played Gears of War... it was top fun in co-op, but would have been a severe bore-fest had I played it through myself, and it a million miles behind Unreal Tournament in my eyes. But that's just preference for you.

Rock Band/2 (PS3) - Since last December I've pumped way more hours into Rock Band than any other game ever. Words can't describe how much I love this game. I'm shoving Rock Band 2 into the same game as it's an outstanding extension of the Rock Band platform.
Slither-Link (DS) - Easily my most played DS game; everything about it is perfect for handheld gaming. I'm dreading finishing it and am hoping that Hudson release a sequel.
Professor Layton and the Curious Village (DS) - Again, this is perfect handheld gaming, and the presentation is utterly charming and absorbing. Brilliant.
N+ (Xbox 360) - I was dubious about getting this as I'm not one for hard games, but something about it completely struck a chord with me. The hypnotic trance induced by the music, the muscle memory making your ninja perform the most excellent platforming trickery and the feeling of elation when a level is completed is what gaming should be all about.
GTAIV (Xbox 360) - I was torn between this and Metal Gear Solid 4, but the living, breathing world of Liberty City is still awe-inducing. Many of the missions were thrilling and Niko was a brilliantly portrayed character. Cops and Crooks was the icing on the cake.
