Top Gear Rally on the N64. Murky, but great handling.
Rallisport Challenge 2 on the Xbox, very arcadey, but so much fun once you nail the handling. It was amazong online too
DiRT3 is great, although I can't get on with the handling in the Gymkhana and the stages are mostly too short.
Colin McRae 4 was the business.

its liquid smooth 60fps too, but you MUST get a US/JPN version as the PAL version aint optimised

I really like Great 1000 Mile Rally.

Shox is great fun for a few hours but it is very shallow. Lovely and smooth visuals though.

Sega Rally Championship is the only rally game that didn't bore me.

EDIT: That said I haven't played any since the Colin McRae 04 on Xbox. For the reason stated above.
