There's a lot of brillant games including more Niche games like P.N.03 but the games that you must own are probally:

    Zelda: Wind Waker Special Edition
    Metroid Prime
    Sonic Adventure
    Mario Sunshine
    Super Monkey Ball
    Resident Evil 4

That'll keep you quiet for a few months! Anywho, hope you enjoy the Gamecube!

Tales of Symphonia. Even if you don't like RPG's, because it has a pretty open-ended action-orientated battle system and light-hearted plot.

Skies of Arcadia Legends, if you've not played SoA on the Dreamcast.

I'll bump Tales of Symphonia, it's a really, really brilliant RPG.

There's also Viewtiful Joe and Killer7 for some Capcom goodness.

Paper Mario 2 is also fantastic, don't miss that one. And Mario Kart: DD.

Resi 4, without a doubt. All the 'big' games will be mentioned, so I'll just chuck in Spiderman 2 for good measure - it's not the greatest game ever but it just feels really good on the 'Cube.

He'll have to find it though if he wants to play it... he's bought the pearl cube which refuses to let Freeloader work on it. Hence he can't import anything.
Lie with passion and be forever damned...

                Must haves are:

                Super Mario Sunshine
                Tales of Symphonia
                Skies of Arcadia Legends
                Paper Mario
                Chibi Robo
                Resident Evil 4
                Luigi's Mansion
Super Monkey Ball (the original only, all of the sequels have been terrible)

I've also found the Mario sports games to be pretty good, Superstar Baseball and Power Tennis especially.

If you like resi then get remake and zero to. F-zero gx is essential too.

I would have said Mr Driller Drill Land but you've gone and bought a PAL one so ignore that.

Metroid Prime, obviously. Luigi's Mansion is great entertainment. Oh I dunno, all the non-usual-suspects that I'd recommend are Japanese like Star Soldier and Mr Driller.
How about Super Monkey Ball? You could pick that up for peanuts (baboom-tish!).
                        Paper Mario and F-Zero too.

Seriously, you should just get a switched NTSC one instead, even imported GC games are really cheap on ebay and the like. So you can't go into a shop and browse 2nd hand stuff, who cares? No one goes into games shops these days anyway, do they?

Del Boy, I'd personally recommend these titles (in no order):
                          Resident Evil 4
                          P.N.03
                          Viewtiful Joe
                          Super Mario Sunshine
                          Chibi Robo
                          Eternal Darkness
                          Battalion Wars
                          F-Zero GX
                          Pikmin
                          Killer 7
                          Super Smash Bros. Melee

                          I hope it helps!

Other people have already mentioned them, but the seven real GameCube essentials (if you don't have the time/resources to track many more down) are:

                            Resident Evil 4
                            Killer7
                            Viewtiful Joe
                            Metroid Prime
                            Eternal Darkness
                            Resident Evil Remake
                            Super Monkey Ball

If you have friends to play with:
                              Super Mario Kart Double Dash
                              Wario Ware
                              Super Mario Strikers/Power Football/whatever it's called
                              Beach Spikers
                              Super Smash Bros. Melee
                              Zelda Four Swords

Some of them are fine for single player too, but here's a list of my personal 1P favourites:

                              Ikaruga
                              Viewtiful Joe
                              Fire Emblem: Path of Radiance
                              Eternal Darkness
                              Battalion Wars
                              Pikmin 2
                              F-Zero GX
                              Metroid Prime
                              Metroid Prime 2
