PSP must haves (IMO of course):

        Tekken Dark Resurrection
        Metal Gear Solid Portable Ops
        Ridge Racer 2
        Initial D Street Stage
        Locoroco
Outrun 2006 Coast 2 Coast (unless you own a console version)
Pro Evo 6 (again, unless you have a console version)
        Gokumakaimura/Ultimate Ghosts n Ghouls
        Every Extend Extra
        Lumines/Lumines 2
        GTA Libery City Stories
        GTA Vice City Stories
        Tales of Eternia

There's more but that's all I can think off without going through my collection in more detail.

Sega Genesis Collection has saved my PSP from the shelf. Loads of really good 2d platformers (Comix Zone, Ristar, Sonic) and three Phantasy Star games!

I've really liked Metal Gear Solid Portable Ops. It's a great MGS game and also a game designed with portable play in mind, since it's divided into missions that can mostly be finished in ten minutes or less. Top game.

Wouldn't recommend that tbh, it takes longer to load than it does to play, and doesn't play as well as on PS2.

I'll second Initial D, I bought it just out of curiousity as I like the anime and wasn't expecting too much but it's actually very decent once you get into it a bit.

Johnny's list seems pretty solid, one that's missing from everyone's list sofar though is DJ Max Portable. It's a fantastic little music game, nice range of difficulty, good tracks, and brilliantly presented.

Still need to pick up Ultimate Ghouls & Ghosts + Every Extend Extra myself... crap.

Had a look through my stuff and would also recommend these:

                          Metal Gear Acid 1 and/or 2
                          Virtua Tennis
                          Wipeout Pure
                          Burnout Legends
                          Katamari Damacy
                          Street Fighter Zero 3
                          Gradius Portable
                          Daxter

Loads of great PSP games. Don't believe the urban myth of it having nothing worth buying.

Also, if you like your shmups, Konami are releasing compilations of Salamander, Parodius and Twinbee in January. I can't wait for those myself!

Try YeaAsia. Wait for a few weeks though as it's coming out as a “The Best” release in Jan and should therefore cost little over a tenner!
Bargain for what I would consider one of the very best and utterly essential games of not only the PSP, but 2006.
It's the most up to date console version of the arcade game' not counting the latest version which was only fairly recently given a location test in Japan.

If I could only have one game for the PSP it would be Every Extend Extra - I found it slow to get into although I finally got the hang of it and now I find it incredibly frustrating...however I can't keep myself away from it, although you're punished for little mistakes and the game gets a lot more difficult the better you do, it's sooooooo rewarding when you're in control of it all and pulling off massive chains. With its bright, vibrant colours it's well suited to the PSP and I often find myself with the music in my head. I was initially concerned about there only being nine levels but I'm still not good enough to get past stage 7, I just get the standard ending

Other games which I've enjoyed on the PSP are Mercury and Mercury Meltdown - they can be irritating at times but I find them quite rewarding to progress through.

Biggest disappointment for me has been Katamari, I really like the PS2 version and while the PSP version is technically a good port the controls just let it down entirely for me. Aside from the lack of accuracy I find I can only do a couple of levels before my fingers are hurting too much to continue.
