The origin of the Jedi was always something a bit obscure in the older Star Wars material; like the really early events of 'the galaxy' were of dubious canon (like I think there was a comic book about how the humans in Star Wars come from Corellia, founded by someone called Carl who came from Earth through a space-time portal... which was crap).
Weirdly, The Acolyte has affected my desire to see Disney tell more Jedi stories, because I felt that...
... the story was shaping up to be something I've always wanted, i.e. something which looked at the Jedi through a critical lens, making it clear that many people disagreed with the way they basically kidnap children and press them into a religious order.
The old EU stuff, particularly KOTOR, portrayed that many people in the Galaxy basically saw the Jedi and Sith as the same; both of them religious nutcases who kidnap children and use their powers for their own ends. Jedi weren't seen universally as a force for good.
In The Acolyte they came down to the Jedi's mistakes over the girls as the actions of a few individuals, and kinda plastered over the larger questions.
I get concerned that Disney, with all the Jedi merch they sell to kids, would never make something that gives the Jedi further moral ambiguity, and I'm not sure how a greater exploration of their origin can work without that.
