I'm seriously considering jacking my PS4 in and picking up a 360 so I can play some actual games I've not played before. It really feels like there's nothing of real worth being released for the next 1 - 2 years!

I'd say getting rid of a next gen machine at this point would prove futile, its already abundantly clear that whilst stuff hasn't come out yet in droves developers are already jacking current gen in for new projects. There's been a lot of cross gen titles so far but much of the disappointment seems to come from people expecting too much of the next gen versions which is daft when there haven't been any next gen gen cross gen games yet, just current gen games plonked onto next gen. The systems prices also won't come down dramatically as they sell too well, its in no retailers advantage to cut profits so fast with years to go so you'd be more likely to lose out.
Now, getting a cheap current machine back though is a good idea if you can to cover the current lull. My rebought PS3 gets loads of use and the free games through Gold/Plus and cheap backlog give plenty even if this is shaping up to be both systems final year. E3 will likely renew the hype so I'd wait a week anyway for the info then re-evaluate your interest

I have yet to dip back into next gen console again. Im pretty much certain I'm going to be getting a PS4, i have Watchdogs waiting to play. But I'm just holding off from buying one until next week just in case Sony decide to make any new packs available or even possibly a price reduction.
Whilst progress for the new consoles is a little slow on the game from, there is still plenty of titles on both systems that i want to buy and play. Yes most games are available in previous gen flavour but they do look that much better on PS4/Xbone.

Buy a Wii U would be my suggestion. Theres plenty of decent games out already and by the time you play through them, stuff should be out for PS4 which you will likely want to play. If you really must sell Ps4, Rebuy Ps4 and play PS4 games and any new Ninty games which appear which take your fancy. Personally I will keep my Ps4 alongside the wii U as it was a gift from my fiancee and I think there is stuff worth playing on it. Watchdogs and Infamous Second Son both look good.
