The picture quality of a lot of DVDs is pretty bad. I know the Japanese and American versions of Kill Bill are edge-enhanced messes that have been filtered to high hell, and from what I remember the UK version isn't much different. A lot of DVDs are screwed up in this way so they'll look good on a tiny CRT screen, so it's no surprise they don't look too good blown up.
More "enthusiast" companies such as The Criterion Collection avoid this sort of thing. If you get "The Rock" (NTSC) it looks extremely good - it looks like a real film, with almost no edge enhancement on most scenes, and a nice amount of film grain to avoid the "plastic" look.
