Not until next update (presumably in 2 months time).
As it stands you do not have to beat Matt multiple times to get each job past 70. Beating him once allows you to level to 75 on any job (beating him on each job does have a benefit however) so the people who take up BLU, COR or PUP can still get to 75 (presuming they have another job 66+). This is only an issue for people who have yet to reach that level AND get one of the new jobs to 70 before June. I don't think anyone will notice. If you have the funds necessary to level a job that quickly, you most likely have beaten Maat anyway.
As to why their is no Maat for the new jobs yet could be down to a few reasons. Maybe:
1. S-E haven't altered the job types of certain types of beastmen yet. I'm pretty certain that the SAM, NIN, DRG and SMN beastmen we see today were different jobs prior to RoZ. To fight Maat you need a Testimony of the job in question which in most cases drops from a beastman of that job type.
2. S-E wish to look at how the players use the jobs before developing AI routines for the NPC controlled BLU, COR and PUP (which would include Maat).
