As with 3rd Strike I think the PS2 port of Garou is supposed to be the most accurate one. I didn't notice long loading times. The Dreamcast one was okish for the time but it's pretty bad now with smaller sprites, terrible sound effects and bizzarely is 50hz only if used on a PAL DC.

I'd go with 1, X and 3 in that order. The last two mvs games really aren't that special (although not as bad as some people make out) but the first three are unbeatable.
