    I totally agree with the whole food/menu analogy.
    So I'm just going to put a few that nobody else has put that comes to mind.

    Prince Of Persia - The last level
    The pixel perfect platformery, a beautifully simplistic puzzle, followed by a great climatictic sword fight. Plenty of parrying... Yow. What a great game.

    Flashback - The Tower Of Death
    Fantastic combat! Running away from a contestant, leaping off a ledge, rolling on the floor, pulling out your gun and turning and shooting in one swift motion. My gosh! The exilaration!

    Ico - The Tower at the End of the Bridge
    Where you get the first sword... A great little set of puzzles in a small section. And when you run across the bridge to and from there, it feels truely epic.

    Secret Of Mana - World Map (after Mana Fortress rises)
    The music! And the total feeling that something bad's going down...

    Mario Kart 64 - Koopa Beach
    Shortcuts rock

    and obviously Rez Lv. 5, most of Super Mario World, etc.etc.etc.etc.

        Aaahh, Flashback... and Another World. Loved those games.

        Those cut scenes were a revolution to me on the MD and SNES.

          Not really a level as such, but the Cleft of Dimension in FF5 was superb in my eyes. Incredibly surreal, and then you have the "Searching the Light" music when you finally get to the part with Exdeath in. Brilliant, made it feel like a crusade.

            Erk. Far too many to list. Here are a few:

            Gunstar Heroes (MD) - The minecart level with the amazing transforming boss. Jaw-dropping at the time, and still impressive.

            Gunstar Heroes (MD) - The board game level. Not only original, but added variety to the mix.

            Silent Scope (DC) - The highway level. Taking out helicopters and ninjas in cars, followed by the Terminator-esque villain in the truck. Exhilarating every time.

            Goemon (SNES) - The mecha boxing level. I couldn't believe it when I first saw it.

            Smash TV (SNES/arcade) - Mutoid Man. 'NO WAY!'

            Parappa The Rapper (PSX) - The car driving level. Cracks me up every time.

            Rogue Leader (GC) - The first level. So atmospheric. The closest to being in the original film yet.

            Yie Ar Kung-Fu (Arcade) - Fan. Come on love, you're chucking all these fans about and you haven't hit me yet.

              Mario 64- The 1st water level where you swim around the sunken ship trying to entice the eel out of the hole.

              Pilotwings 64- Using the birdman to fly atound the USA level. The most relaxing game I have ever played.

              Rez- "There is a mind killer". That and the running man level.

                Hmm,

                Goldeneye - The Frigate Level - Perfect for a 5 Minute blast-a-thon.

                R-Type - The Big Ship (Level 3).

                Mario Kart 64 - The Freeway Level in Mirror Mode (Big Truck Madness).
