Discovering the Stones can be equally brilliant. They are not so consistent, but when they are on form few can touch them. You cannot go wrong with Aftermath, Let it Bleed and Exile on Main Street as starting points.
As far as the Stones go, I've heard their greatest hits CD but that's all. I can't believe I've never bought any of their proper albums before.

Their album "Number Ones" is missing a ton of brilliant stuff because they weren't released as singles.
Discovering The Beatles lead me on to discovering other 60's bands (The Kinks, The Who, Syd Barrett era Pink Floyd, The Animals, The Stones, and on and on) until it became my favourite era of music. A big chunk of the modern bands I like are very 60's influenced too (like all the best bands).
