I think the Wii U looks great personally, I was wowed by the demo on stage of the shurikens being flicked onto the screen. The possibilities are tremendous with this, it actually works very similarly to something like Real Racing 2 on the iPad 2 now - if you connect it to your TV over the HDMI adapter, the actual game is shown on the TV while the iPad screen shows a full map of the track, time, speedometer, that kind of thing.
PS Vita will be able to pull off a very similar trick, but it'll be hamstrung by the fact that a combination of PS3 and PSV is not standard, whereas the tablet is bundled with every Wii U sold so developers can build in new features using it with confidence.
I was one of those who positively SCOFFED at the idea of a controller with a built in touchscreen, but I actually think the way Nintendo have taken focus away from the console itself and placed it on the 'tablet' controller is extremely clever.

Having spent some time looking at Microsoft Surface and Microsoft Vision 2019 videos today I have come to the conclusion that the Wii U will be fantastic. An almost 180 turnaround for me. Nintendo's conference really didn't show the potential of this thing. They did it a complete injustice.
I even checked out some Wii U footage from nintendo's site. They focus a bit on looking around the TV and extending what you can see on that pirate game. This alone will be great in some games. The conference was such a missed opportunity to really show off.

I'll need to look at that bird demo in HD at somepoint but to be honest, I'm not sure the 360 or PS3 couldn't do that. It was very pretty but wasn't an amazing technical showcase. Maybe Digital Foundry could have a look at it and see if there are some major features on display.
It's entirely possible that the Console isn't even put together at the moment. There's a good chance the demo booths had workstations in them rather than the final consoles.

In the meantime they should revise the outer chassis, it doesn't particularly good.
